To us at The Mattoon Sugar and Spice Company chili is a very personal thing. Everyone seems to have a “favorite chili” that their moms or dads used to make, or that they grew up with in a certain part of the country. Our spice blend along with one or more of our recipes on this website should at least meet or exceed the chili experience you grew up with. We know our chili spice will give you some new options that are not only tasty, but darn hard to beat. Like all chili, the longer our finished products sit (2 days or longer), the better they taste. So, please try to reserve some of the chili for a few days to get the full impact of the flavor and quality of the product. Our “Standard Chili” recipe has been an award winner for the last 20 plus years and like I said before is darn hard to beat. We created the “Tailgate Chili” as a great alternative to the Standard Chili. By using hamburger, pork sausage and smoked bacon, this chili blends into a somewhat “sweet and smoky” flavor that everyone seems to really love. This too has been an award winner over the past 3 to 4 years since its creation. The “Low Fat - Low Cholesterol Chili Recipe” is designed to provide a healthy alternative chili. The flavor is as good as the Standard Chili recipe with less calories, fat and cholesterol. Keep in mind, the chili seasoning is what provides the flavor to the meat whether it is hamburger, pork or poultry. So, you will have the same great flavor only with less calories and fat. The Vegan Chili Recipe was created by us since my wife informed me several months ago that she couldn’t eat meat any longer (much to my dismay). So, I started looking for alternative methods for making chili without the meat. Much to my delight, I discovered TVP (textured vegetable protein). I purchased several pounds of the stuff and experimented with it to see if it was “as good as” regular meat. What I found is that TVP when hydrated (water and soy sauce) had the same texture as ground meat. When I added the spices to it I honestly couldn’t tell the difference between the TVP and regular meat (you see the TVP takes on the properties of the spices). TVP has become a staple in our household. * Note to Non-meat users - We have also created a spice that when added to the TVP transforms it into a “pork sausage” flavor (I compared real pork sausage with the TVP version and couldn’t tell any difference in flavor and the TVP didn’t have any grease). This will allow for non-meat users to create their own Tailgate Chili (minus the bacon). We will be providing this as one of our spice products in the near future. The Venison Chili and Venison Tailgate Chili Recipes are basically the same as our Standard Chili and Tailgate Chili Recipes only using venison as a substitute for the hamburger and sausage. For those of you who love the wonderful flavor of venison, our spices will enhance the taste of the venison without compromising its flavor. |
